Title: Pine Nut Salad

Yield: 6 Servings

2cPine nuts
2tbButter
1/2lbAlphabet pasta
1cBlack olives; sliced
1/2cParsley; minced
1/2cGreen onion; minced
1/3cGreen bell pepper
1/3cRed bell pepper
1/4cFresh lemon juice
1/4cOilve oil
  Freshly ground pepper
  Parmesan cheese; to taste

In a large skillet, lightly toast the pine nuts in the butter; drain on paper towels & cool. Cook the alphabet pasta in boiling water; drain & rinse in cold water. (Be very careful not to overcook the pasta.) Very gently, mix together all ingredients; cover & chill. Source: "Vineyard Seasons" by Susan Branch.
